Bake Something Good with Dagoba

This holiday season we’re indulging foodies, bakers and chocolate lovers alike with a new line of Dagoba organic baking bars in 59% cacao (semi-sweet) and 100% cacao (unsweetened).

The 100% organic unsweetened baking bar is the first of its kind to be made and sold in the U.S. Crafted from carefully selected organic cacao of Latin American origin, Dagoba’s 100% baking bar provides a depth of flavor that will make your baked goods deeper and darker, and savory dishes more complex. For the true chocolate connoisseur, this bar’s unique cacao blend and extra smooth finish makes it palatable enough to eat straight out of the wrapper.

Dagoba’s 59% semi-sweet baking bar is made of the same rich, organic chocolate as our Dark 59% eating bar. Its balanced notes of cacao and subtle flavors of raisin and fig make it a special find in the baking category. It’s perfect for igniting culinary imagination and can be used in main courses, cocktails and baked goods.

Baking with Dagoba’s bars doesn’t just taste good, it also does good. A portion of baking bar proceeds supports Project Upala, Dagoba’s partnership with the Upala Cacao Cooperative in Costa Rica where Dagoba is working with small family farms to help improve economic opportunity, restore native biodiversity and provide habitat for indigenous wildlife.

Both of the baking bars are packaged as 6 oz. bricks scored into 1 oz. pieces for easy culinary use. Look for the bars on specialty store shelves this fall or purchase them through our online store, along with other Dagoba baking products.

From the Kitchen of Dagoba Organic Chocolate: Easy, Elegant Dagoba® Truffles (Makes about 40 truffles)

Ingredients:
6 oz 59% Dagoba® Organic Chocolate baking bar
1/3 cup organic heavy cream
1 oz organic unsalted butter
Dagoba® Organic Cacao Powder

Directions:
In the spirit of chocolate exploration we love to add one of the following; a few drops of liqueur, pure extracts, essential oils or chopped fruit and nuts. Savor and explore.

Chop chocolate into ¼ inch size pieces and place in mixing bowl. Bring cream to a boil, then pour over chopped chocolate and stir until the chocolate is melted smoothly. Allow the chocolate and cream mixture to cool until just barely warm, then add the butter and any other flavorings and stir until smooth. Cover and cool until thick but not hard and truffles can be easily shaped by hand; using a melon baller or teaspoon shape into small balls using your hands to roll them if necessary.

Place several tablespoons of cacao powder in a small bowl and roll each truffle in the powder until covered. Store in tightly covered container for up to one month in the refrigerator or two months in the freezer.

Dagoba’s Full Circle Sustainability is rooted deeply at our Ashland, Ore. factory – not only in how Dagoba makes and packages chocolate, but through employees’ efforts both at work and in the community as well. Dagobians in Ashland incorporate sustainable practices in every aspect of their lives, including their commute to work. The three bikes perched against the Dagoba sign in the picture to the left belong to Ruby, Elizabeth and Mary. Ruby and Elizabeth are master chocolate alchemists perfecting Dagoba’s nibs, chocolate covered coffee beans, single origin bars and gift items. With chocolate to fuel them, the devout bicyclists ride to work rain or shine. Elizabeth is also an active sustainability advocate in the city. The third bike belongs to an original Dagobian, Mary, ¬ mom of founder, Frederick Schilling, who continues to wear a variety of hats at Dagoba, most often as manager of our community involvement.

 
 
 

More Cooking Ideas

The Maya used cacao in combination with vanilla, ground corn and chili. This Thanksgiving add a little Mayan spice to your turkey day by trying some culinary cacao concoctions of your own. Dagoba has a few suggestions to get you started.
